Here is my entry for the "Cupcake Project and Scoopalicious Ice Cream Cupcake Round Up" (not sure if I have entered in time ??? :( )

Peanut Butter Ice Cream and Chocolate Fudge Cupcakes!!!!

Choc chip biscuit base
60 grams Chop chip biscuits finely crushed
30 grams Butter melted

Combine and press in to the base of 12 regular cupcake baking papers
Cook at 180c for 5 minutes

Chocolate fudge Cupcakes

115gr plain white flour
1 tbsp cocoa powder
100ml water
40gr butter
3 tbsp caster sugar
1/2 tbsp golden syrup
1 1/2 tbsp milk
1/2 tsp vanilla extract ( I use a vanilla bean)
1/2 tsp bicarbonate of soda

preheat oven to 180c
heat together water, butter, caster sugar and syrup in a saucepan, stirring constantly, until the sugar has dissolved. Bring to the boil, then reduce the heat and cook for 5 mins. remove from heat and cool

mix together the milk, vanilla and bicarb, stir constantly to dissolve......alternatively pour the syrup mix and milk in the the flour mixture, beating well after each addition

fill each baking cup with the batter so they are no more than 2/3 full and bake them in the oven for 25 mins until they are firm to touch
leave the cupcakes in the pan for 10 minutes then transfer to a wire rack

Peanut Butter Ice Cream

Peanut Butter Ice Cream Recipe
Philadelphia Style

Prep Time: 10 minutes
Ice Cream Maker Time: Approximately 25-30 minutes
Makes: 1 1/2 quarts
Servings: Ten 1/2 cup servings

Ingredients:

1 cup creamy peanut butter
1/2 cup granulated sugar
1 cup milk
2 cups heavy cream
1 tsp vanilla extract

Directions:
Cream peanut butter and sugar together, until well mixed.

Stir peanut butter mixture and milk together until smooth and sugar is completely dissolved (use a whisk or hand mixer).

Add cream and vanilla and stir well.

Pour mixture into your ice cream maker.

Mix until thick about 25-30 minutes or according to manufacturer's instructions.

Chocolate Ganache
1/4 cup (600ml) cream
100grams milk eating chocolate

Stir ingredients in small saucepan over a low heat until smooth. Cool to a spreading consistency.

Top with 1/4 of a choc chip cookie

And you get these :)

I roughly based this cupcake on this recipe

Peanut Butter and Fudge Ice Cream Pie

300g packet choc chip cookies
40g melted butter
1 tbsp milk
1 litre vanilla ice-cream
375g crunchy peanut butter

Hot Fudge Sauce
200g coarsely chopped dark chocolate
50g coarsely chopped white marshmallows
300ml thickened cream

1. Grease 24cm round loose based flan tin
2. Blend or process cookies until mixture resembles coarse breadcrumbs. Add butter and milk, process until combined
3. Press cookie mixture evenly over base and around side of tin, refrigerate 10 mins
4. Beat softened ice-cream and peanut butter in large bowl with electric mixer until combined. Spoon pie filling into crumb crust. Cover, freeze 3 hours or overnight
5. Drizzle slices of pie with hot fudge sauce to serve

Sauce
Combine ingredients in small saucepan, stir over heat, without boiling, until smooth.

YUMMY!!!!

Here are the cakes Elizajayne gave to her friend on the weekend..........Chocolate Fudge cupcakes with chocolate fudge frosting and 100s & 1000s

All decorated up with matching boxes
Toppers and gift cards from a lovely lady on Etsy

Recipe as requested :)

115gr plain white flour
1 tbsp cocoa powder
100ml water
40gr butter
3 tbsp caster sugar

melt the chocolate and butter together with the water in a heatproof bowl over a saucepan of gently simmering water. Sift in the icing sugar and beat until smooth and thick. spread the warm icing on top of each cupcake and leave to set before serving

( i normally do 4 lots of this to go with the double lot of the cake mix because I leave it cool so I can pipe in on so use more then just spreading it and I have just done a chocolate butter cream as well)

Special order for some cupcakes for an International Nurse's Day afternoon tea at the local Nursing home

All topped with the little blue hearts I made

Definitely not my best work (they taste fine just don't look as pretty as I would have liked) but apparently SLEEP is important to normal body function!!!!...Who would have guessed ?????

Tim Tam Cupcakes DROOL

Sorry about the crappy photos but just to top a great day off yesterday, my camera didn't want to be my friend :( I am sure you get the idea!!!!!

Ingredients for cake mixture (I got 24 regular size cupcakes)
250g plain flour
2 teaspoons baking powder
1 teaspoon salt
125g unsalted butter, room temperature
200g Castor sugar
2 eggs
1 teaspoon vanilla extract (I used a vanilla bean)
180ml single cream
½ packet Tim Tams (or more/less, to taste)

Ingredients for cream cheese frosting
(I doubled this because I like mine to look pretty and have piped icing)
180g white chocolate, broken into pieces
180g cream cheese, cut into pieces
185g unsalted butter, room temperature, cut into pieces
½ packet Tim Tams (or more/less, to taste)

Method

1. Pre-heat oven to 180°c
2. Mix flour, baking powder and salt together and set aside
3. Cream butter and sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add vanilla. Alternately add flour mixture and single cream and beat until batter is smooth. Fold in crushed Tim Tams
4. Spoon batter into cupcake papers, to about ⅔ full
5. Bake for 20-25 minutes or until tester comes out clean. Remove from oven and cool

Cream cheese frosting

1. In a large bowl over simmering water melt white chocolate until smooth and creamy. It should be just warm to the touch
2. Beat cream cheese and butter until light and fluffy. Add melted chocolate and beat again until smooth
3. Use frosting immediately or it will harden
4. Sprinkle crushed Tim Tams immediately, while frosting is still soft

Well I made these for playgroup BUT we can't go because I have spewy kids someone is coming to pick them up so everyone will be enjoying them but NOT us :(

I did try one last night and they were yummy.....Next time I think I will use milk chocolate in the topping rather than the white chocolate :) and I think I over bashed the biscuits, should have left them a little bigger.

Here are the Cupcakes I made for Mum's Birthday on Saturday

Peanut butter cupcakes with peanut butter cups topped with Peanut Butter frosting and mini peanut butter cups

OMG I had one and it was waaaaaaaaaaaaaaaaay to much peanut butter BUT Mum loves them they are her all time favourite

Recipe for Sarah

Peanut Butter from The Cupcake Book (Susanna Tee)

225g plain white flour
2tsp baking powder
55g butter, softened
225g soft light brown sugar
115g crunchy peanut butter (I use smooth)
2 eggs
3/4 tsp vanilla extract (I use a vanilla bean)
100ml milk

Pre heat oven to 180c.....Line muffin pans with 14 baking cups. sift together flour and baking powder
Put the butter, brown sugar and peanut butter in a large bowl and whisk for 1-2 minutes until mixed well. Add the eggs, one at a time, beating well after each addition, then beat in the vanilla. Using a large metal spoon, fold in the flour mixture and then the milk
Fill each cup with batter (I add half the mixture to the baking cups then put in the peanut butter cups and then finishing filling), bake in the oven for about 25 minutes until golden brown and firm to touch. Leave the cupcakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.

FOR THE FROSTING

150g crunchy peanut butter (I use smooth)
55g full-fat soft cream cheese
25g butter softened
225g icing sugar

Beat together the peanut butter, cream cheese and butter until smooth. Sift in the icing sugar and beat until well mixed
When cupcakes are cool, spread the icing on top of each, swirling it gently with a small round-bladed knife
(This makes a dry icing so I normally add less icing sugar and a little milk if needed so I can pipe the icing on)
Then I top with a mini peanut butter cup :)

Enjoy!!

Yesterday was Grae's birthday so of course he got cupcakes :)
Vanilla with passionfruit frosting because they are his favourite

Darcy and Kane got to choose what toppers we put on and they chose Clowns because "Dad is a clown, Hey Mum????" ROFL he sure is ;-)

Not sure how the cakes have turned out :( They may be a little over cooked because we had a major drama while I was making them. Kane got a HUGE bloody splinter in his toe. He wouldn't let me get it out and he was crying the poor little man, so I had to text mum to come and deal with it .............Yeah for Mums <3

It is Grae's great niece's 1st Birthday on Thursday.....We have been invited to her birthday party and naming day on Saturday so I organised a lovely gift for then BUT Grae found out the other day they are also having something for her actual birthday so I am NOT going and buying another gift instead she is getting 2 dozen cupcakes LOL

So I thought I would give making some toppers a go (because it is working out really expensive buying them all the time and for something like this on such short notice I just can't get them here quick enough)..........I am doing a pink and purple theme for her cupcakes, so went with that for her toppers
So these are what I ended up with ......I am pretty happy with how they turned out for my 1st try and especially because I had 4 little helpers :)

And here is the cupcake box I have started decorating for her

Will put up some photos of the finished cupcakes on Thursday :)

I am pretty stoked to have an order from a friend to do her daughter's 7th birthday cupcakes..........Pink and butterflies :) Doing those next week so will post some pics of those too

I have also had an email today from my sister asking for a flavour and price list for her boss in Brisbane......so I best make up one of those LOL

Ohhhhhhhhhhhh all so exciting and Lesley is away and I can't even tell her :(

My sister gave me a cup and saucer set in the Robert Gordon design "Vanilla Bakery" for Christmas........So I started the search for more pieces.....Of course it had to be a discontinued design so it was hard to find :(.......I searched Ebay and picked up a few bits and pieces BUT was still missing stuff I wanted (some lovely online friends even went to the IRL factory outlets searching for me <3 but still NO LUCK )......Finally it was in the Robert Gordon online store as clearance items YIPEEEEEEEEE ........So I did my bit for the country and stimulated the Robert Gordon economy ROFL

Grae and the kids gave me the teapot, cups and saucers and milk jug and sugar bowl in another cupcake design for my birthday :-)

And the few other pieces I picked up on ebay while searching for the "Vanilla Bakery" pieces

These cupcakes are devine...........they are my all time favourites so far..........I am in love

Quick easy and simple and the taste is to die for :)

Not to sure about the glaze.....I am not a fan of non pipeable frostings/toppings because they just look crap......Might try a ganache next time ;)

They don't look pretty but they sure do taste good

Christmas Cupcakes ...As Promised

Here are the Christmas cupcakes I made for my family <3

They were Vanilla on Vanilla with the foil wrapped chocolates from here
(there postage cost was beyond belief so I got my sister to pick them up ;) )

And the others are Peppermint cakes with chocolate frosting and a cute little christmas tree lolly from here

All boxed up (in my cupcake boxes from here) they looked great :)

The family LOVED them ........well worth the hours it took to cook them ALL LOL

Sorry very pic heavy today LOL

I made these today for a little cupcake cooking comp we are running on a forum I visit.........I think they may become my "signature" cupcakes :) I am pretty happy with how they have turned out :)

Lesley sent me down a new piping bag and tip, so the icing is a bit dodgy as this was my first go with it.....should improve with practice I hope

I used lesley's vanilla cupcake recipe

Lesley's Vanilla Cupcakes

150gr butter - room temperature
3/4 cup caster sugar
2 eggs
1/2 cup milk
2 cups SR flour
2 teaspoons lemon juice
dash of vanilla extract (I use 1 vanilla bean)

Pre heat oven to 180 deg

Beat until changed colour OR I do it like this

cream butter and sugar till pale, add eggs 1 at a time (mixing in each one)
add lemon juice and vanilla
add half the flour and milk, mix in, add in the remaining flour and milk mix till pale

Bake
Muffin pans 20 mins
cupcake pans 15 mins
mini pans 10 mins

You don't want them over cooked......just cooked is best (golden not brown )

and her buttercream recipe with a vanilla bean added for vanilla frosting

Lesley's frosting

250gr butter
1kg icing sugar

beat butter until smooth and then add icing sugar (give or take on the amount depends on how sweet you like it) .....beat until smooth and fluffy
You may need to add a few drops of milk if your frosting is a bit stiff.....only add a few drops at a time till you get the desired frosting
This makes enough for about 48 cupcakes but it can be stored in the fridge

Peanut Butter and Chocolate Cupcakes with Peanut Butter Frosting and Reese's Pieces for decoration

These are not my favourite cupcakes but my Mum loves them so she gets them every now and again.....Probably not as often as she would like though LOL

Because I cook them for Mum I call them "Grammies" :)

I use this recipe for the cupcakes

Ingredients
2 1/4 cups plain flour
1 1/2 cups sugar
1/2 cup creamy peanut butter (I some times use super crunchy for that extra peanut hit)
3 1/2 teaspoons baking powder
1 teaspoon salt
1/8 teaspoon baking soda
3 tablespoons cocoa
1 1/4 cups milk
1 teaspoon vanilla (sometimes I use 1 vanilla bean)
3 large eggs

Method

Preheat oven to 180 deg (160 for fan forced)

Combine all ingredients in a large bowl....Mix well till mixture becomes paler

Fill cupcake papers

Bake for 20 to 25 mins......Don't over cook

Frost then enjoy :)

My Grandfather ended up in hospital on the weekend, so most of the family were at the hospital for a few days. So what did I do??? Baked them all some Cupcakes of course :)

It was my sister's Birthday on the 9th and Dad's birthday is today...we all met up with my sister yesterday for a picnic in the park so of course I had to take cupcakes.........Caramel Mudcakes with Caramel Frosting and Vanilla Cupcakes with Passionfruit Frosting .....Mmmmmmmmm very very yummy and all traveled safely in my Cupcake Courier (oh I love my cupcake courier :))

Friday 7th November was Lascinda's 6th Birthday.....Of course she requested birthday cupcakes.....HONEYCOMB Ones :) So honeycomb cupcakes she got :) With some Straawberry cupcakes and white chocolate frosting

After the icing (plain butter cream icing)..........Yes my icing tips are still missing **ROLLS EYES**

Choc chip cookies that the kids cooked yesterday......I had the dough in the freezer so they just rolled into to balls and cook them :) Super easy and a quick snack!!!

Well I gave these a go but would do them differently next time

They tasted great but they need improving

I roughly used this recipe

And yes my icing was a train wreck BUT hey with 7 helpers, sometimes things just don't work out LOL

They look terrible BUT taste great

Well it seems nothing is sacred in this house :( The kids have lost some of my piping tips arghhhhhhhhhh

So the icing on these aren't the best as I had to use my piping ball which is OK but not my favourite and without the tip I like to use :(

So I need to go piping bag shopping again

We were on holidays for Darcy and Kane's 4th Birthday at the Gold coast for the Nappyciono National Meet Up so we cheated and bought them cupcakes for the birthday from The Little Cupcake and Cookie Shop at Southport.....Absolutely lovely....We had passionfruit, bootylicious, Honeycomb **DROOL**, Rasberry & white chocolate **DROOL**,honey & Banana........all were lovely and fresh and the women at the shop were great to deal A++ from me :)

One more Birthday next month and then we are finished again for the year
